John’s Garlic Broccoli

I can’t give exact measurements for this one – we make it slightly differently each time but here’s the idea:

1 or 2 heads of broccoli
Olive Oil
8 – 10 cloves Garlic, sliced.
Chicken Stock

Cut the florets off the broccoli. Coat the bottom of a large frying pan with oil and heat over high heat. Cook the broccoli quickly in hot oil, stirring occasionally, until florets begin to blacken. If the oil has been completely absorbed, add a bit more. Add garlic and let it brown, only a few seconds as the pan is still very hot. Add about 1/2″ chicken stock to the bottom of the pan and cover the pan. Broccoli will steam in pan.

When the broccoli is tender, remove the lid and let the chicken stock cook off and brown the broccoli some more, stirring frequently until broccoli is cooked to your liking.
