Yellow Rice with Chicken & Chorizo


2 boneless skinless chicken breasts
3 chorizo
1 family size box of Goya yellow rice
1 1/2 cup frozen peas
1 medium onion, chopped
1 red bell pepper, chopped


hot sauce
green olives


This is a one pot meal – use heavy pot with fitted lid (like le crueset). Slice chorizo into rounds and brown in pot, then remove. Cube chicken and brown in oil from chorizo until no longer pink, then remove. Saute onion and red bell pepper until onion is translucent. Return meat to pan and add yellow rice following directions on box for preparation. Cover and simmer until rice is tender. Add peas and stir, serve.
