Whole Wheat Pizza with Potatoes, Spinach & Goat Cheese

Ingredients:

2 Whole Wheat Pizza Dough (I used store bought dough)

4 red potatoes, finely sliced

olive oil

rosemary salt

garlic

spinach

garlic

goat cheese

parmesan cheese

Directions:

**In the morning  take dough out from freezer or refrigerator and place in oiled bowl. Cover bowl with saran wrap.

When ready to prepare pizzas, 1st sauté the spinach: see sauteed spinach & garlic

Preheat Oven to 450°

Slice red potatoes into thin, even slices with a mandolin. In a large bowl, toss potato slices with olive oil, salt & rosemary. Roll out pizza dough & place on oiled pans. Top dough with potatoes. Top potatoes with sauteed spinach. Crumble goat cheese around. Grate Parmesan on top of everything.

Bake at 450° for 20-25 minutes.
