Simon & Garfunkel White Bean Soup

Ingredients:
2 cups Navy Beans, soaked over night
8 cups stock
1 Fat slice of ham (leave whole)
1 can fire roasted tomatoes
3 carrots
2 stalks celery
2 onions
2 parmesan rinds
5 cloves garlic
parsley
sage
rosemary
thyme
salt
pepper

Put everything in crock pot and cook all day. When ready to eat remove parmesan rinds and ham. Puree to make broth thicker but leave some beans whole. Cut up ham and return to pot. Serve with parmesan & hot sauce if you like.
