(This is a great way to use up leftovers!)



Corn Tortillas (2 per person)

Olive oil

Refried Beans

Some kind of Protein: chicken, fried egg, leftover chili….

Scallions or Thinly Sliced Onion


Optional Toppings: Cherry Tomato, Avocado, Cilantro



Preheat Oven to 375°

Brush both sides of  the corn tortillas with olive oil and bake it at 375° for about 10 minutes.

Top tostadas with canned refried beans, protein of your choice, jack cheese,  scallion or onion &  jalapeño

Broil till cheese melts & is just beginning to brown.

Top with tomato, avocado, cilantro
