a chronicle of weekly meal plans from someone who can't just throw a meal together

*this recipe is designed to use up leftover pot roast or beef stew

Ingredients:

3 lg russet potatoes
4 T. unsalted butter
heavy cream
salt
pepper

Leftover pot roast or beef stew
3 T. Worcestershire Sauce
Peas

Directions:

Make mashed potatoes:

Peel, quarter & boil potatoes for 25 minutes
Drain water & potatoes from pot
Melt butter in pot potatoes were boiled in
Add potatoes back and mash with masher
Add cream, salt & pepper and mix

Prepare the meat:

While mashed potatoes are cooking, simmer leftover pot roast with Worcestershire sauce. Just before assembly, add frozen meat.

Assemble:

Spread meat on bottom of an oven proof baking dish. Cover with mashed potatoes. Using the back of a fork, press tine marks into potatoes. Broil on low until  potatoes lightly browned on top.
