Nancy’s Pink Sauce w/Sausage

Ingredients:

Olive Oil
2 small / med onions, diced
5 Sweet Italian Sausage, casings removed
Vodka
1 can crushed tomatoes
Salt
Cream

Fusilli
Red Pepper Flakes
Parmesan

Directions:

Saute onion in olive oil. When onion starts to brown add pieces of sausage by ripping bite sized chunks off four of the five uncased sausages. Crumble fifth sausage into pot. When sausage is browned deglaze bottom of pot with vodka. Cook vodka off and repeat process with more vodka leaving just a bit at bottom of pot. Add tomatoes & salt. Simmer while water boils for pasta. Just before you put pasta in to boil, add the heavy cream to make the sauce pink. (1 used about 1/2 of a pint container) Cook pasta according to package directions.

Serve with grated parmesan & crushed red pepper.
