Frittata w/Bratworst & Onion

I’ll give the exact recipe for the sausage and onion frittata but really, you can use any fillings you want. It’s a great way to use up stray sausage and bacon. I have yet to graduate to putting vegetables in my frittata but it seems like a reasonable thing to do.

Ingredients:

2 or 3 T. olive oil
2 bratwurst, sliced
2 onions, diced

8 eggs
1/4 cup heavy cream
1/4 teaspoon kosher salt
1/8 teaspoon pepper

cheddar cheese for grating on top

In a cast iron skillet, brown the bratwurst and onions in the olive oil. Meanwhile whisk eggs, cream, salt & pepper in a separate bowl. When onions & sausage are browned to your satisfaction, pour egg mixture on top. Cook on medium heat for 5 minutes and meanwhile, heat broiler on high. After 5 minutes the frittata will be set on the sides and bottom but the center will be runny. Grate some cheese on top and put pan under broiler for 2 minutes.
