The Unnatural Cook

a chronicle of weekly meal plans from someone who can't just throw a meal together

Ingredients:

1/2 pkg frozen corn
1 mango
1 avocado
1 pt. cherry tomatoes
1/4 red onion
1 scallion
lime and/or lemon juice
olive oil

salt
pepper
ground coriander

Directions:

Boil froze corn so it’s cooked through but still has nice crisp bite to it, cool under tap.

Dice mango & avocado. Slice cherry tomatoes in half. Dice red onion & slice white & some green of scallion. Mix all vegetables together in bowl. Add splash of olive oil and squeeze in some lemon and/or lime juice (whatever you’ve got). Season with salt, pepper and ground coriander.
